San Miguel Mill in Ahuachapán, El Salvador

The San Miguel Mill is located in Ahuachapán in the western Apaneca-Ilamatepec Mountain Range of El Salvador. The mill, founded in 1975, has expanded over the years to include farms and an export company. It is a family owned and operated business with a focus on sustainable practices. San Miguel conserves a natural rain forest, which is hundreds of years old and serves as a habitat for many diverse species.

This coffee was grown on numerous farms and processed together at the San Miguel mill. The smallholder farmers grow their coffee in the shade to reduce the need for pesticides and use organic compost made from the pulp of unused cherries.

Once received at the mill, all aspects of processing, from receiving cherry to export, are carefully quality controlled and monitored.

Chemex

Form meets function in the classically beautiful Chemex brewer. Grind size is critical when brewing with this method since the brew bed can get large. Use a coarser grind to experience bright and floral fruit notes.
